A two-time Global Sushi Challenge contender representing the United States as one of the top sushi chefs in America, Billy is likely Minnesota’s only Mongolian-born, Russian-influenced, Japanese-trained restaurateur.
He is the founder of Sushi Fix, Billy Sushi, and Billy After Dark — concepts that have helped redefine dining and nightlife in Minneapolis’ North Loop. Known for his high-energy hospitality and unforgettable dining experiences, Billy has performed live bluefin tuna cutting shows for thousands of guests across the country while building a loyal following around his larger-than-life personality and culinary artistry.
Beyond the restaurant world, Billy now serves as an Honorary Consul for Mongolia, helping promote Mongolian culture, tourism, and international relationships through food, hospitality, and community leadership.
